APPLICATION OF THE UEPs METHOD FOR THE COSTING OF A PIZZERIA

Pizza restaurants are a significant and growing segment of small businesses and microenterprises, and because they operate in a highly competitive industry, they need accurate cost information to aid in management decision-making. A simple and viable costing method for these companies is Production Effort Units (UEPs), which is normally applied in the manufacturing context for costing and management control purposes. This study aims to verify the applicability of the UEPs method for measuring transformation costs in a pizzeria, and can be classified as descriptive, through bibliographic and documentary research, and a case study, using systematic observation, non-structured interviews, and documentary analysis. The study was conducted at a pizzeria in João Pessoa. The main conclusions are that the UEPs method is suitable for costing transformation in the pizza preparation sector, requiring more effort in terms of data collection. The case study also seems to suggest that the UEPs method satisfactorily met the objectives of a costing method.
