A alimentação escolar é de extrema importância para o desenvolvimento dos alunos, e este trabalho visa avaliar o conhecimento dos profissionais envolvidos diretamente na manipulação de alimentos sobre as boas práticas. A pesquisa foi realizada em um distrito administrativo de um muniípio do interior do Paraná, com um público de merendeiras de uma escola estadual e municipal. Os resultados obtidos dão conta de que as profissionais necessitam de treinamento e reciclagem constante para que possam realizar suas atividades com qualidade e segurança. Pode-se concluir que o trabalho atingiu o objetivo proposto e sugere-se a ampliação das pesquisas na área para que se aprimore a qualificação destes profissionais.
